Sol Tacos ~ Gourmet Southern Tacos with Local Ingredients

Sol Tacos

When summer rolls around I can pretty much live off tacos. Thankfully my friend Art over at the Wandering Sheppard shared the news earlier this spring about a great new food truck  called Sol Tacos. It’s a gourmet food truck that serves southern inspired tacos using soft hand made tortillas filled with locally sourced southern organic ingredients that compliment classic Mexican street food.

The truck is based out of Cary and operated by chef Andy Schaumann (follow him on twitter @Sol_Tacos). Schaumann has a long history of working in great restaurants having most recently worked at well the known Vivaci in North Hills. You can tell he pours his heart & soul into his business and it really comes out in the culinary creations he serves from the truck.


When I first visited the truck the daily tacos being offered included a Buttermilk Fried flounder taco with cilantro sour cream, lettuce, and citrus radish salad. Other offerings include a blackened chicken nacho taco and the cheddar chuck burger. I’m a big fan of the fish taco but look forward to trying the chicken nacho taco next!

A new addition to the taco menu this 4th of July weekend is a special pork taco made with local beer braised pork, pickled okra, hot banana peppers, chicharones, and western BBQ.

Sol Tacos

Sol Tacos also features a selection of creative sides that rotates seasonally. This week’s side items include local sliced heirloom tomatoes from birdland farms with lime aioli, maldon sea salt, balsamic, and olive oil. Another new offering is the “personal nachos” with organic corn chips, ground chuck, black beans, shredded cheese, queso dip, tomato salsa, sour cream, hot sauce.

You can find the bright green Sol Tacos truck this fourth of July weekend all over the Triangle. Starting on Thursday night (7/3) at Deep River Brewing in Clayton, Friday (7/4) at Knightdale Station Parks fireworks celebration, Saturday morning (7/5) at Apex Farmers Market, & then Sunday (7/6) at Raleigh Brewing Company. A Visit to La Farm Bakery in Cary

I’ve had La Farm Bakery in Cary on my radar for some time now but for one reason or another I just simply have never had the opportunity to visit. As a lover of bread I just couldn’t let this go on. I finally visited this wonderful local bakery a few weeks ago and now that I have experienced first hand the fantastic breads, coffee and lunch in their cafe La Farm will now be a regular stop for me each time I am in Cary.

Master Baker Lionel Vatinet

La Farm Bakery introduced Cary and the greater Triangle area to their quality breads back in 1999. The bakery is the realization of a lifelong dream for Lionel Vatinet, a distinguished Master Baker and one of the most sought-after bread consultants in America. Located at Preston Corners Shopping Center on Cary Parkway, La Farm is a modern bakery that continues to respect and honor the centuries-old baking traditions and techniques Vatinet learned in his native France.

During my visit I toured the bakery to learn more about how they create their fresh baked breads. I was pleased to learn that La Farm uses local products whenever possible. This includes using local flour from Carolina Ground in Asheville, connecting the farmer, miller and baker. I also learned that in April they installed a new MiWi “Ideal” deck oven that came all the way from Germany. With its precise temperature settings and six baking decks La Farm is able to step up their already impressive production to meet the ever increasing demand for their breads.

As soon as you walk in the door there is a wonderful of array of breads and baked goods on display. La Farm typically offers around 15 different standard breads daily with 20 seasonal breads and baked treats added to the mix throughout the year. They feature a special bread each month. I visited on the last day they were offering the popular Jalapeno Cheddar Bread. June’s featured bread is a Pepperoni Cheddar Bread. I must go back and try this soon!

I had the opportunity to sit down with Lionel to sample some breads and learn more about the process of baking the different styles of breads they offer. Lionel has dedicated his life’s work to teaching the art & science of bread baking and I was very impressed by his warm and friendly interactions with customers and how he takes the time to explain his craft. I could tell that while the focus of the bakery is on the bread he also strives to educate the consumer. He regularly holds baking classes at both at La Farm and at his home and just recently published his first book “A Passion for Bread: Lessons from a Master Baker.”

The “La Farm”

One of my favorite breads was a large crusty loaf called the “La Farm”. This 5-lb boule is Lionel Vatinet’s signature bread, developed following his tour in France, working with masters across the country. This bread combines several different types of flour, including local, organic ‘Carolina Ground’ flour. Lionel explained that in years past, families in small villages throughout France would visit community ovens to bake breads for the week. The “La Farm” bread pays homage to that time.

It is also no secret that I love a good espresso and I never miss a chance to enjoy a drink while visiting a cafe for the first time. It makes me very happy that La Farm offers excellent coffee and espresso drinks using locally roasted Counter Culture Coffee. The coffee isn’t just an afterthought either. It is well prepared by trained baristas. I had a great cappuccino when I first arrived and just sat back to take in the in the bustling scene at the bakery.

Croque Monsieur

Learning about bread makes me hungry so I made sure I had lunch before the end of my first visit to La Farm. The cafe side of the bakery offers a wide variety of French and American-inspired sandwiches, salads, soups and entrees featuring artisan breads; for breakfast, lunch, brunch and dinner. Some of the most popular items are the Croque Madame or the Quiche du Jour. My sandwich was excellent and I am now looking forward to going back for brunch to try the French toast!

White Chocolate Baguette

One other important note. Before my visit everyone I spoke to mentioned I should try La Farm’s White Chocolate Baguette. Since bread and chocolate are two of my most favorite things in the world I had a hunch I would like it. Let’s just say the baguette lives up to the hype and is definite “must try” for any visitor to the bakery.

Bread Bakers Guild of America Open House – June 21st.
Master Baker Lionel Vatinet of La Farm Bakery will host his second annual Bread Bakers Guild of America Open House at La Farm Bakery on June 21st from 3pm to 4pm. He’ll offer behind-the-scene tours of the bakery, followed by a bread shaping demo, and the opportunity to practice shaping dough by hand. Following the demo, guests will have 20 minutes to learn from Lionel’s European bread shaping techniques and practice with their own dough, which they’ll take home to bake. Many of Lionel’s breads will be sampled throughout the afternoon.

Triangle Yarn Crawl & Carolina Fiber Fest – Spring 2014

Triangle Yarn Crawl
The Spring 2014 Triangle Yarn Crawl is a fun self-guided tour that connects fiber lovers who enjoy the adventure of discovering new local yarn shops in the Triangle. The crawl takes place during normal business hours on March 22-23, 2014 and includes nine local shops throughout the Triangle. Yarn crawl participants are provided with the means to develop their own self-guided itinerary for a weekend of exploration and fun and will receive a “Crawl Passport” to have stamped at each shop for promotions.

The crawl is sponsored by local retailers who are provided with a raffle prize that they fill with products. In addition to the raffle, each shop offers a different promotion and demonstration of their choice. Attendance is absolutely FREE. Yarn and other items in the participating shops are available for purchase, but purchasing items is not mandatory.

Registration opens February 24, 2014. Register here to receive your Crawl Passport! Be sure to present your Crawl Passport at each shop and have it stamped for promotions available to crawlers and to qualify for the Grand Prize drawing.

Carolina Fiber Fest 2014

Carolina FiberFest announces its annual event, taking place April 4-6 at Sanford Lions Club Fairgrounds in Sanford, NC. Drawing over 1,500 fiber enthusiasts from the surrounding area and beyond, Carolina FiberFest is sure to delight festivalgoers of all ages. This family-friendly event features over 40 vendors selling fiber-related tools, wool, alpaca and cotton fiber, pottery and more; 20+ classes taught by experienced teachers like Donna Druchunas and Esther Rodgers; and free demonstrations from sheep shearing and herding to weaving and carding.

“Carolina FiberFest is a great event for all ages to learn the tradition of fiber arts, meet others who are passionate about the fiber arts, and stock up on supplies and tools,” says Michelle Odgers, co-director.

A Home Chef’s Paradise – Learning to Cook at Whisk in Cary

Cooking Class at Whisk

Earlier this month I attended a soup making demonstration class at Whisk, a new locally-owned cookware & bakeware shop located in Cary’s Waverly Place shopping center. Whisk is more than just a retail store offering just about everything a home cook needs, they also host numerous cooking classes throughout the week. The classes offered include skill building, demonstration and hands-on participation style formats with trained professional instructors who have a passion for food and cooking.

Class Participation

I was at Whisk to take a class to learn how to make soup. The cooking classes are held in a full sized kitchen located in the back of the store with students sitting right in on the action. There are several chairs located around the kitchen counter where the instructor works in addition to several high-top tables with director like chairs providing a nice view for students to watch.

The class setting and interaction with the chef makes it feel like you are attending a fun and intimate cooking show complete with small cameras installed in the kitchen ceiling that capture the chef at work from multiple angles that is then displayed on a flat screen tv on the kitchen wall. This allows the entire class to see what is happening during each step no matter where you sit making sure you don’t miss a thing.

Italian Sausage, White Bean, and Kale Soup – Porcini Bisque – Pasta Fagiole with Pancetta

The soups we learned to make in class were Porcini Bisque, Pasta Fagiole with Pancetta, and Italian sausage, White Bean, and Kale soup. The instructor took us through each step of adding the ingredients and provided helpful tips along the way. The classes are very social and interactive with the chef answering questions as they prepare the dish and inviting students up to the stove to help cook. It is a very comfortable learning environment and I felt like I was learning to cook from a friend while they worked in their home kitchen.

Throughout the class students can sip on complimentary glasses of wine and enjoy light hors d’oeuvre. Of course once the soups were done we also had the chance to try each turning the evening into a fun tasting party as the class wrapped up.

There was plenty of soup for the class to try and you could pour yourself a bowl, cup, or just a small sample. I wanted to try them all and enjoy some of the salad prepared to accompany the soups so I opted for the smaller sample serving. All three were excellent by my favorites were the Pasta Fagiole and the Italian Sausage, White Bean, and Kale Soup. I liked that the classes provide a printed handout that includes the recipe and cooking instructions making it easy for you to then go home and recreate what you learned.

After the class ended I had a chance to browse the retail area of the store.  Whisk has diverse array of merchandise that covers everything from food preparation to presentation. For me the most important  aspect of Whisk is that they have a friendly and knowledgeable staff that can help you find what you are looking for and explain how to use it.

Kitchen Supplies

I enjoyed browsing all the fun go-to gadgets, and one-of-a kind items you can find at Whisk and I really liked that the items were competitively priced too. I found quite a few gift ideas. I was looking for a Christmas gift to get for my father. He recently installed a bar at my parents house and was excited to find Whisk had the “King Ice Cube Tray”. This specialty ice tray makes large square ice cubes prefect for the home bartender. I also noticed they had a nice lineup of coffee equipment and even sell locally roasted Muddy Dog Coffee beans. That will be my next purchase!

Cooking Supplies

Dan Saklad along with his wife and business partner Diana, opened Whisk with the hopes it would be “a destination for cooks, foodies, chefs and gadget hounds in the Triangle.” I think they have succeeded in their goal. I encourage you to support this locally owned store and consider them the next time you need something for your home kitchen or a gift for a foodie friend. Hatch is a concept born out of wanting a unique and dynamic shopping experience in downtown Durham. Guided by their love for excellent design, you’ll notice that all the products at Hatch fit a particular style of the Modern South – colorful, graphic, simple, approachable, and thoughtfully designed. As often as they can, they source goods made in the USA, often right here in the South, and often from suppliers that are small batch independent designer/makers, craftspeople, and/or eco-friendly producers. Sling Shot Coffee is a favorite of mine. It is my “go to” for a party host gift. Made right here in Raleigh, Slingshot was started Jennifer Bonchak a little over a year ago. Jennifer hand brews and bottles small batches of cold brew coffee using only two ingredients — quality, in-season, single-origin, organic coffee beans roasted locally by Counter Culture Coffee and filtered tap water from the City of Oaks. Raleigh Coffee Company is a small batch roaster that operates out of North Raleigh. I’m a huge fan of the Ethiopian Yergacheffe and their Honduras Decaf is incredible and drinks just like regular. Visit their website to learn more about their ongoing Holiday Bean Project: Haiti Playground where $5 from every bag sold will benefit children in Haiti. Also, if you have a lot of coffee lovers on your list check out their Holiday Wholesale Program for special pricing on orders of 5 or more bags of coffee.

Carrboro Coffee Roasters Company is Chapel Hill/Carrboro’s premiere small batch coffee roaster. With a worldwide reach that focuses on, works within, and gives back to the community they live in, and the world at large. The coffee is sourced with these ideals in mind. They source through Direct Relationships with the farmers, and offer Certified Organic & Fair Trade coffees. They are also careful to source coffee that is grown and processed humanely, and allows the farmers the means to live decently. Owner Scott Conary regularly travels to coffee growing countries around the world to establish and support their Direct Relationship model.

Following up on the coffee bean suggestions, nothing beats a gift card to your favorite local coffee shop. Bean Traders not only sells their own coffee beans (roasted in house), but the shop also has many different products from local artisans that make for great gifts & stocking stuffers. While you’re over that way you might want to drive down the road and swing by Rise Durham for a dozen donuts. They will be a hit at your next holiday party.
