Sol Tacos ~ Gourmet Southern Tacos with Local Ingredients

When summer rolls around I can pretty much live off tacos. Thankfully my friend Art over at the Wandering Sheppard shared the news earlier this spring about a great new food truck  called Sol Tacos. It’s a gourmet food truck that serves southern inspired tacos using soft hand made tortillas filled with locally sourced southern organic ingredients that compliment classic Mexican street food.

The truck is based out of Cary and operated by chef Andy Schaumann (follow him on twitter @Sol_Tacos). Schaumann has a long history of working in great restaurants having most recently worked at well the known Vivaci in North Hills. You can tell he pours his heart & soul into his business and it really comes out in the culinary creations he serves from the truck.


When I first visited the truck the daily tacos being offered included a Buttermilk Fried flounder taco with cilantro sour cream, lettuce, and citrus radish salad. Other offerings include a blackened chicken nacho taco and the cheddar chuck burger. I’m a big fan of the fish taco but look forward to trying the chicken nacho taco next!

A new addition to the taco menu this 4th of July weekend is a special pork taco made with local beer braised pork, pickled okra, hot banana peppers, chicharones, and western BBQ.

Sol Tacos

Sol Tacos also features a selection of creative sides that rotates seasonally. This week’s side items include local sliced heirloom tomatoes from birdland farms with lime aioli, maldon sea salt, balsamic, and olive oil. Another new offering is the “personal nachos” with organic corn chips, ground chuck, black beans, shredded cheese, queso dip, tomato salsa, sour cream, hot sauce.

You can find the bright green Sol Tacos truck this fourth of July weekend all over the Triangle. Starting on Thursday night (7/3) at Deep River Brewing in Clayton, Friday (7/4) at Knightdale Station Parks fireworks celebration, Saturday morning (7/5) at Apex Farmers Market, & then Sunday (7/6) at Raleigh Brewing Company. Taylor’s Wine Shop is a hidden gem in North Raleigh. Don’t let its unassuming exterior fool you. This is a top notch wine shop with a nice selection of wines & craft beers offered by knowledgeable and friendly staff. Join them this Saturday, June 21st 1-4pm for one of Taylor’s famous Parking Lot Parties. The event will feature live music by Velvet Goldfish, Free beer and wine tastings, and two awesome local food trucks: Sol Tacos selling gourmet southern tacos & Not Just Icing offering delicious cupcakes. You can learn a little more about both of these great food trucks below.

Sol Tacos serves tacos in soft  hand made soft tortillas. Owner Andy Schaumann has worked in a kitchen his whole life and prides himself on using locally sourced southern organic ingredients whenever possible that compliment Mexican street food including herbs fresh from his own garden.

I am a big fan of Sol Taco’s buttermilk fried flounder taco with cilantro sour cream, lettuce, and citrus radish salad. Other great menu offerings include the blackened chicken nacho taco, cheddar chuck burger and beer braised pulled pork tacos. I also here he may have a special side item this weekend. A stuffed avacado BLT with thick cut bacon, compari tomatoes, and maldon sea salt. Not Just Icing  is the Triangle’s first mobile cupcakery making their cupcakes right there on the truck. They are committed to providing made from scratch, baked fresh daily on the truck scrumptious treats throughout the Triangle area. I’ve had their cupcakes a several times now and they are fantastic!

Strawberry Delight

Not Just Icing’s cupcakes are made using all-natural ingredients with real butter instead of oils and real fruit instead of fruit flavored extracts. Their cupcakes are free of preservatives so they are best eaten the day you buy them. My current favorite cupcake is their “Strawberry Delight”, a vanilla cake with strawberry buttercream icing topped with a fresh strawberry slice.

Oak City Seven Free Concert w/ Atlanta Rhythm Section
The Free Concert Series in downtown Raleigh’s City Plaza kicks off this Thursday 5-10:30pm with a lineup of live music headlined by the Atlanta Rhythm Section. The Chirba Chirba Food  truck will also be on hand to feed the hungry masses. Music on the Back Porch atAmerican Tobacco Campus
The legendary Back Porch Music on the Lawn series returns Durham’s American Tobacco Campus May 15-September 7 with 8 free shows. This Thursday enjoy music by Mandolin Orange. Free Picnics and chairs welcome. Music starts at 6pm. Event Details

Durham Bulls Game w/ Fireworks!
The Durham Bulls take on Lehigh Valley Friday evening at 7:05. Make sure you stick around after the game for the Free Fireworks. The stadium was recently updated and now features more local beer and food options. The fireworks really are a nice show after the game! Event Details

Sol Tacos Food Truck at Big Boss Brewery
There is a new food truck in town. If you haven’t had a southern inspired gourmet taco from Sol Tacos yet you can find the truck this Friday at Big Boss Brewery starting at 5pm. My personal favorite is the buttermilk battered flounder fish taco for just $4. Tacos and beer go perfect together.

Blues on the Plaza at Northgate Mall
Free Blues Music show 6-9pm featuring Charlley Ward & friends including many of the Triangle’s best blues artists musicians. Food available for purchase from Papa Mojo’s Roadhouse, CJ’s Street food, and Iced Cupcakes; Beer available for purchase from Carolina Brewery. Event Details

Saturday May 31st

Saturdays at Saxapahaw
The Saxapahaw Rivermill weekly festivities include performances by top bands featuring bluegrass, back porch, blues, folk, gospel, latin, celtic, funk, roots, americana and old time music and a thriving Farmer’s Market with fresh local produce, cheese, eggs, baked goods, flowers, honey, organic meat, locally produced wine, hand made arts and crafts and more.  Saturday from 5pm-8pm. Great opportunity to visit a local private garden and browse works from local artists. The Alvarino Norwood family invites you  to visit their garden located off Atlantic Avenue in Raleigh this Saturday and Sunday. Food Truck Rodeo in Carrboro benefiting Fix-a-Home
The community is invited to the food truck rodeo, 3-7 p.m., Sunday, June 1 at the Carrboro Town Commons. The rodeo will include the following food trucks: Parlez-Vous Crepe, Chirba Chirba Dumplings, Pie Pushers, Steel String Brewery, Captain Poncho’s Taco Truck, MaMa Duke’s, and Tar Heel Creamery.
