They are the only North Carolina Food truck in the finals and they need your support! The winner of the contest is determined by online voting that is going on now through December 12th. I can personally vouch for how wonderful their cupcakes are as I have enjoyed more than my fair share at local food truck rodeos and events. Local Bloggers Take Over Not Just Icing Cupcake Truck at Big Boss Brewery August 5th!

Watch out Raleigh! This Tuesday, August 5th I’ll be working alongside local food truck blogger Art aka The Wandering Sheppard on the Not Just Icing cupcake food truck at Big Boss Brewing Company (249 Wicker Drive, Raleigh). The truck will be at the brewery from 5-8pm and we will be baking/selling several different flavors of cupcakes. That’s right, the cupcakes are made right on the truck! This will not only be a lot of fun since it will be my first time working on a food truck, but it will also help raise money for a great local cause. Not Just Icing will donate one dollar for every four pack of cupcakes sold and all tips Art & I earn that night will be donated to Food Bank of Central & Eastern North Carolina. So come on out and put us to work! Buy a cupcake or two and stick around for the Big Boss Run Club – the club meets at 7pm and runners of all levels are welcome.

Sol Tacos ~ Gourmet Southern Tacos with Local Ingredients

When summer rolls around I can pretty much live off tacos. Thankfully my friend Art over at the Wandering Sheppard shared the news earlier this spring about a great new food truck  called Sol Tacos. It’s a gourmet food truck that serves southern inspired tacos using soft hand made tortillas filled with locally sourced southern organic ingredients that compliment classic Mexican street food.

The truck is based out of Cary and operated by chef Andy Schaumann (follow him on twitter @Sol_Tacos). Schaumann has a long history of working in great restaurants having most recently worked at well the known Vivaci in North Hills. You can tell he pours his heart & soul into his business and it really comes out in the culinary creations he serves from the truck.


When I first visited the truck the daily tacos being offered included a Buttermilk Fried flounder taco with cilantro sour cream, lettuce, and citrus radish salad. Other offerings include a blackened chicken nacho taco and the cheddar chuck burger. I’m a big fan of the fish taco but look forward to trying the chicken nacho taco next!

A new addition to the taco menu this 4th of July weekend is a special pork taco made with local beer braised pork, pickled okra, hot banana peppers, chicharones, and western BBQ.

Sol Tacos

Sol Tacos also features a selection of creative sides that rotates seasonally. This week’s side items include local sliced heirloom tomatoes from birdland farms with lime aioli, maldon sea salt, balsamic, and olive oil. Another new offering is the “personal nachos” with organic corn chips, ground chuck, black beans, shredded cheese, queso dip, tomato salsa, sour cream, hot sauce.

You can find the bright green Sol Tacos truck this fourth of July weekend all over the Triangle. Starting on Thursday night (7/3) at Deep River Brewing in Clayton, Friday (7/4) at Knightdale Station Parks fireworks celebration, Saturday morning (7/5) at Apex Farmers Market, & then Sunday (7/6) at Raleigh Brewing Company. Belgian Waffology Food Truck

Thanks to a tip from my friend Art over at The Wandering Sheppard I recently caught up with a new food truck I have been looking forward to experiencing for quite some time. Now this is no ordinary food truck. This is the Triangle’s very own waffle truck called Belgian Waffology. It is operated by owner François Kerckhof of Belgium and features both sweet and savory Belgian waffles! If the crowd around this truck last week is any indication, I’d say it is a huge hit!

Now, a little about the waffles. Liege waffles are waffles made from a dough containing pearl sugar. This waffle is thicker, heavier and chewy. Brussels waffles are what most people think of when they think of a Belgian waffle. They are made from a batter and are typically light, crusty, golden and rectangular.

Toppings offered for both range from fresh strawberries and homemade whipped cream to nutella, bananas, cinnamon, and honey. There are also savory options like goat cheese, walnuts, apples, tomatoes and mozzarella. I am a huge fan of liege waffles so I tried one of those with fresh strawberries. I loved the crispy outside and chewy inside. Absolutely perfect.

Francois and his crew make all the waffles from scratch on the truck using waffle irons from Belgium. A plain waffle (a treat in itself) runs $4. Prices range up to $8 depending on the various sweet and savory topping combos. You can also grab a drink to wash the waffle down including coffee roasted right here in the Triangle from Carrboro Coffee.

If you plan to be in town the Memorial Day weekend you can find the waffle truck at Deep River Brewery in Clayton this Sunday 5/25 from 1-6pm. Belgian Waffles and local NC beer sounds like a great way to spend a Sunday!

Picture of the Week: “Stuft” – The Gourmet Stuffed Potato Food Truck!

Yesterday I made a quick stop at Big Boss Brewery to snap this picture of “Stuft” – a gourmet stuffed potato food truck that is relatively new on the Triangle food truck scene. I didn’t get a chance to try their menu, but I never met a carb I didn’t like and can’t wait to try some of their food soon.
