Jubala Village Coffee Turns Three!

It’s hard to believe but it has now been three years since Jubala Village Coffee first opened their doors in North Raleigh’s Lafayette Village. Jubala’s arrival back in 2011 set the gold standard for 3rd wave coffee in Raleigh and remains one of my favorite places to enjoy a great pour over coffee or espresso. I’ve learned so much about coffee as a customer there and have enjoyed watching them grow these past three years. I’m excited for them as they mark their 3rd anniversary and even more excited to hear that they will be offering some very special menu items this week to celebrate!

I plan to stop by on Tuesday for the Birthday Cake Wafflegato! This is a twist on the traditional affogato (which means “drowned” in Italian). A typical affogato is a shot of espresso poured over a scoop of vanilla ice cream. Just add a small piece of waffle to the mix and you have yourself a “Wafflegato” – I can’t wait to try one!

Cortado

Over the years I’ve tried a lot of new drinks at Jubala, but my favorite drink by far is the cortado. Cortado means “cut” in Spanish. The drink is an espresso “cut” with milk. Typically in a 1:1 ratio of espresso and steamed milk served in a four ounce glass. Perfect for when you want something more than a macchiato but smaller than a latte.

My favorite spot to sit at Jubala is the brew bar, right by the pour over station. Even when they are busy, the baristas always seem to find the time to share about the coffee they are brewing. I’ve learned so much about the Counter Culture Coffee they serve, the origins of their different coffee beans and the art of pour over brewing while sitting at this bar.

So make sure you swing by Jubala this week wish them a happy birthday and try one of their special menu items. While you are there give a shout-out to barista and Jubala general manager Tim Jones. Tim is representing the Triangle in the US Barista Competition at the US Coffee Championships being held in Seattle this April. Go team Jubala!

Big Eastern US Coffee Championships Come to Durham!

Big Eastern Coffee Championships

The Triangle is going to be the center of the east coast coffee scene this weekend. The “Big Eastern” US Coffee Championships will be held at the Cotton Room in Durham  this weekend (January 17th-19th). The event is hosted by Counter Culture and Dallis Brothers Coffee.

The event will be 3 full days of coffee competitions featuring the top baristas in the region.  It is FREE and open to the public.  I am volunteering at the event but will also have down time to watch the Barista and Brewers Cup competitions as local and regional baristas battle it out for the regional titles.

The Big Eastern encompasses 21 states across the eastern seaboard drawing baristas from up and down the coast. Competitors train months in advance. They spend countless hours developing their own “signature drinks” and presentation styles taking great care in selecting their coffees, brewing devices, music selection and perfecting their presentation techniques in hopes of impressing the judges and securing the regional title.

Barista Competition Explained (From the Official Website)
“The regional coffee competitions include performances from professional baristas over a 3-day event. In a 15-minute presentation, competitors prepare and serve three courses of espresso based beverages to a panel of four sensory judges, two technical judges and one head judge. Competitors strive for a harmonious balance of sweetness, bitterness, acidity, and aromatics. A signature beverage is a highly innovative, freestyle espresso-based beverage created by the barista for the competition.”

Brewers Cup Explained (From the Official Website)
“The United States Brewers Cup is an exciting competition that highlights and celebrates the fine art of manual brewing. Competitors are judged in two rounds by skilled coffee tasters. The first round is a blind tasting, the competitors all brew the same coffee on their chosen manual deceives. Those who advance to the second round will brew and present their chosen coffee to the judges’ panel. The winner of the US Brewers Cup will represent the United States in the World Brewers Cup Championship.”

It wasn’t until the very the last week of 2013, but I finally made it to one of the free public coffee cuppings offered every Friday morning at the Counter Culture Coffee training center in Durham. Counter Culture has done a lot to support the Triangle’s coffee community and culture and I’m a big fan of their coffee and the shops that serve it around the Triangle. Attending one of their cuppings has long been on my list of local activities to explore and the experience from my first visit to their training center did not disappoint!

Leading the Coffee Discussion

The weekly cuppings are held at 10am each Friday at the Counter Culture Training Center located off S. Alston Avenue in Durham. Counter Culture has similar training centers in Asheville, Atlanta Boston, Chicago, New York, Philadelphia, and Washington DC. These training centers are where they hold classes, educational demonstrations, and barista certification training for coffee professionals. The Durham location is a bit unique in that it is attached to a neighboring building where Counter Culture roasts all of their coffee before it is shipped out to retail locations and coffee shops across the country.

The cupping lasts about an hour and is followed by a quick tour of the coffee roasting facility. On the day I attended they were cupping three wonderful coffees harvested from the African country of Burundi. The three coffees cupped were MPEMBA, Buziraghindwa, and a natural sundried Burizaghindwa. How a coffee tastes is influenced by the growing environment (climate and soil type etc.) in addition to the botanical variety of the coffee how it is is processed. The three coffees we cupped ranged in flavor and aroma from earthy & spicy to very bright & fruity.

Coffee Cupping Setup

In general a “coffee cupping” is the practice of observing the tastes and aromas of brewed coffee. Cuppings are a lot of fun because you learn about new coffees and how they are different from one another. These public cupping are particularly engaging since they provide the opportunity to share thoughts with others and discussing with the group what you each noticed and experienced.

There are no wrong answers in cupping, just different perspectives and experiences. Cuppings can help you develop a reference library of flavors and taste sensations that can become a background against which you can examine new coffees. Over time a cupper can begin to associate particular flavors with geographical regions and different botanical varieties of coffee.

Initiating Brewing With The Hot Water Pour-Over

The cupping procedure follows four primary steps. As you progress through each step you begin to notice how the aroma changes or is enhanced as the coffee transitions from dried ground beans to complete brewed coffee. The  overall goal is to measure aspects of the coffee’s taste, specifically the body, sweetness, acidity, flavor, and aftertaste. The cupping steps include:

  • Sniffing the dry coffee grounds
  • Smelling the coffee after the hot water pour-over
  • The “breaking  of the crust” (breaking through the floating layer of coffee grounds as the coffee brews)
  • Tasting or “slurping” the coffee.

Smelling the Brewed Coffee

During this particular cupping there were about 15 cups of each coffee lined up in stations along the counter. There were roughly 30 or so people there and we all took turns going from station to station smelling the different coffees during each step of the cupping process. After each step one of the coffee buyers at Counter Culture would lead a short discussion with the group about what everyone experienced from each coffee. It was interesting to hear the different flavors and aromas others picked up. Preparing To Taste The Coffee

This all lead up to the final step when we finally tasted each coffee. The brewed coffee is first prepped by the Counter Culture staff. Using two spoons, they skillfully removed the floating layer of brewed grounds from each cup. Once this is done we all took turns taking a spoonful of each coffee and slurping it loudy. Slurping loudly is done by sucking the coffee in with such velocity that it is aerated and sprayed across your entire palate. This allows the full flavor profile of the coffee to be expressed and experienced by the taster.

Touring Counter Culture Coffee

The room was somewhat divided on which coffee was their favorite. My favorite was the fruity natural sundried Burizaghindwa. I enjoyed its brightness and the hints of orange and blackberry I tasted. After the cupping was completed we transitioned into the other side of the building where the group was given a brief tour of the coffee roasting operation. We were lead through the area where they stage their coffees delivered from around the world and even got to see where the coffee is bagged and labels are applied to each bag of coffee by hand.

Coffee Roaster

The final stop on the tour took us to where the real magic happens. We witnessed the coffee roasters in action! The day of my visit was just two days after the Christmas holiday so things were hopping with two large roasters creating batches of delicious freshly roasted beans. It was interesting to see how all the pieces of the coffee operation fit together to deliver those 12 ounce bags of freshly roasted coffee on the grocery store shelf. The cupping and the behind the scenes look at the roasting process gave me much to ponder the next time I am enjoying a delicious cappuccino in my favorite local coffee shop.

Triangle Coffee Shops Open Thanksgiving Day 2013

If you’re like me, sometimes you need to get out of the house or find refuge after braving the grocery store one last time on Thanksgiving Day. That’s why I like to keep a list of local coffee shops that will be open on Thanksgiving, usually with limited hours, that provide such an escape. Here is a quick list of local coffee shops I have confirmed will be open this Thursday:

Caffe Bellezza
is a NEW solar powered, mobile coffee bar serving locally roasted Carrboro Coffee and tea. On Thursday they will be set up at Wakefield High School in North Raleigh for the Annual Skinny Turkey Half Marathon. Location: 2200 Wakefield Pines Dr, Raleigh, NC.

Caffee Driade and Open Eye Cafe will have pastries and coffee to go in case you are looking for coffee or desert items to pick up to bring to your Thanksgiving Dinner

Joule Coffee will also be offering pastries and light fare in addition to coffee. They will also have to-go boxes of coffee & pastries available in case you need to grab some goodies for the family at home.

Sola Coffee will also be offering their usual breakfast food menu which of course includes their famous mini donuts!

Sola Coffee & Cafe’ Introduces New Dinner Menu!

Sola for Dinner ~ Assorted Meats & Cheeses

If you follow me on instagram and twitter then you know I am no stranger to Sola Coffee & Café. They are one of my “go to” places for great coffee and espresso drinks in Raleigh. Yet my pictures of coffee and cool latte art only tell half of the story at Sola. Over the past year Sola has blossomed into a great café with a creative and ever growing food menu that now offers great options for the dinner crowd in addition to their already well known breakfast and lunch offerings.

Bruschetta

Earlier this fall Sola introduced a new dinner menu featuring additional menu items diners can enjoy at their café after 5pm Mon-Sat. The new dinner menu features small plate items like meat and cheese boards with fresh fruit, nuts, olives and local honey, bruschetta, and new fresh salads and artisan pizzas. This is all in addition to their already fantastic menu of homemade soups and sandwiches that Sola continues to offer (along with their famous mini doughnuts which are always available!)

White Garden Pizza

If you follow Sola on facebook you will often catch updates about the homemade soups they offer, like this weeks vegetarian chili! My current favorite new menu item at Sola is the White Garden Pizza (pictured above) with mozzarella cheese, cherry tomatoes, spinach, pesto, basil and a flavorful balsamic glaze. As with all their menu items, the ingredients for the new dinner options are always fresh in addition to locally and regionally sourced whenever possible.

Local Beers & European Wines

With the addition of new food items, Sola has also started offering a select menu of locally brewed craft beers and several great European wines. I love the local beer scene in the Triangle and am thrilled to see Sola offering brews made by some of my favorite local places like LoneRider Brewery and Big Boss Brewery. If you are more of a wine drinker they have a nice selection of whites and reds to enjoy with dinner. I’m a big fan of gruner veltliner wines out of Austria. I find the spicy fruitiness and dry finish of a gruner makes for the perfect white wine to enjoy during the colder fall months.

Mixed Green Salad

If you have been following my blog recently you know I have been writing a bit about upcoming marathons and half marathons I am preparing for. Part of my training is about eating better and that includes eating more healthy salads. Fortunately I have found lots of great salads at Sola. I particularly enjoy their mixed green salad (shown above). It has a healthy portion of mixed greens along with cucumber, cherry tomatoes, almonds, red onion, and garbanzo beans. The homemade dressing is fantastic and is made using a secret recipe!

Affogato

Of course, just because I am eating healthier these days doesn’t mean I can’t enjoy a treat now and then. There are several sweet options to enjoy at Sola including yummy affogatos (espresso shot poured over a scoop of ice cream) or a slice of cheesecake or chocolate cake. They also now offer a gluten free apple crisp desert which I think is great. It is very yummy and I appreciate the fact they provide options for people with dietary restrictions looking for gluten free items.

Live Music at Sola

If you are looking for a fun date night location in North Raleigh check out the Live Music scene at Sola. They typically have live music each Friday and Saturday night starting around 7:30pm. I’ve heard everything from bluegrass and Jazz to Celtic music played at sola. It is great to see the community support great local artists and I love that there is a great place to grab dinner and hear live music in North Raleigh now on the weekends. Visit their events calendar to keep up to date on the live music schedule.

Cappuccino

Of course no matter when you visit Sola you can always enjoy a great coffee or espresso drink. My current drink of choice is the cappuccino. I always make sure I leave room for coffee after dinner!
